They make all of their food from fresh, local ingredients, every day in their kitchens. No nasties, no additives, no shortcuts. They grind their own spices by hand and hire expertly trained chefs to cook in their clay oven. Each dish is made as the order comes through, so it’ll come out as and when it’s ready.
